3 c. graham cracker crumbs
6 T. butter, melted
1 can sweetened condensed milk
2-8 oz. packages cream cheese, softened
½ c. key lime juice or lime juice can be substituted
For Crust:
Combine graham cracker crumbs and butter and mix well. Divide into 8-9 small ramekins or small mason jars. Press down in the ramekins and level the top.
In mixer, combine the cream cheese and sweetened condensed milk and mix on medium speed until creamy. Slowly add lime juice and mix until smooth. Pour into ramekins and cover.
Refrigerate for 1-2 hours and top with whipped cream and strawberries or raspberries. Serve cold.
*Variations include substituting lemon juice for lime juice.
Omitting the juice and adding 1/2 c. chocolate ganache, 1 tsp. vanilla and using chocolate sandwich cookies in place of the graham crackers.
Omit the juice and add vailla and you have a simple cheesecake.
