Perfect for summer and simple to make for large crowds. This recipe can be changed up in so many ways to make it perfect for your family The key is the dressing!
Ingredients:
4 medium steaks
Iceburg lettuce
Romaine lettuce
Red Lettuce
2 Ears of corn, shucked
1 Tomato
1-2 cans black beans
1-2 Red Peppers
1 red onion
1 Avocado
Cotija cheese
1 cup Jasmin Rice
1 1/2 cup Water
1 T. butter
1/2/ tsp salt
1 Lime
Salt and pepper to taste
Cook rice in water, with salt and butter, on high heat until it begins to boil. Once boiling, cover and reduce heat to low. Simmer for 15 minutes. Remove from heat.
Season steaks with salt and pepper or steak seasoning of your choice. Grill to desired temperature. Place the corn on grill and cook over medium heat for 5 minutes on each side. Remove steak from the grill and let rest for 5 minutes. Remove the corn and allow to cool slightly before cutting corn off the cob.
While meat is cooking, dice red peppers, tomato, red onion, and avocado. Drain black beans and rinse. Cut up lettuce and place in bowl with the rice. Cut up lime into wedges. Slice the steak and place on top of lettuce. Continue adding other ingredients, red pepper, tomato, onion, black beans, corn, and avocado. Sprinkle with cheese.
Top with favorite dressing or avocado lime dressing below and a lime wedge.
Dressing:
1 ripe avocado
Juice from 1/2 a lime
1/2 c. Greek yogurt
1 tsp. garlic
cilantro, salt and pepper to taste.
Add all ingredients to a blender and blend until smooth. Serve over burrito bowl, nachos, or tacos.
Mix this up by trying other meats and adding your own variety of veggies.
